Weight Watcher O’Wednesday
I want to make Wednesday’s my day to talk about my dieting journey and to share recipes, dieting links and such. Tuesday’s are my weigh in date. I am trying to maintain my weight now as I’ve taken off all that extra fat (45lbs) I loaded on my body in the past years. Just yesterday someone asked me where I found 45lbs to lose, evidently, since I hear that statement a lot, I hid the extra weight pretty well. But mostly, I think it’s because I’m tall and the weight was spread out. Trust me, my muffin top was drooping over my jeans, it was just hidden by my loose shirts. I now weigh about 134 down from a high of 179.2!
So here’s how I did it, I joined WW in September and got to my goal weight in Dec. I became a life member in January. I have gone about 15lbs under my goal weight and that is ok. I feel 10 years younger. Dawn told me when we started this WW journey that if I worked out I’d lose the weight faster. Yep, I did and I’m so glad she told me that because I am all about the fitness now. I work out every day, do aerobic walking, jogging, resistance training, light weights…all things I feel comfortable with. I never stepped into a gym, did it all at home on my own. I am contemplating running in my first 5K in late April…we’ll see.
Once you get your head around the WW plan it’s really quite easy to do. I used the online tracking tool and that kept me honest and taught me how to eat healthy and to pay attention to portions. Portion control is something we all need help with. Learning to read the labels on the products we eat is so important. Finding out how unhealthy restaurant food is can be mind blowing! But my favorite part about eating healthy is my newly discovered love of roasting vegetables. I’ll post more about that on another day.
Today I’m going to share one of my favorite snacking recipes:
Holy O’Moly Guacamole
Just in time for St. Paddy’s day, well it is green!
This is how I make the Holy Moly Guacamole from the Hungry Girl 200 under 200 cookbook. I love this recipe and I love that it uses green peas! (I can’t taste the peas, honestly I can’t!)
This is super easy to make. Drain peas and pour into a food processor. Blend.
Scoop out the avocado and add to the blended peas. Blend together.
Next I add all my spices, lime juice and yogurt. Just dump it all in there and blend away.
Season to taste. Now I like a creamy guacamole, but I know many like chunky so once the smooth guacamole has been processed, add chopped cherry or grape tomatoes and stir. Also, I don’t like chopped onions (my likes and dislikes when it comes to onions can wait until another post) so I use onion powder, but if you like onions add chopped onions. Mix and serve!
Here’s the great part. A 1/3 cup is only 1 WW point. And if you use the baked Tostitos scoops, you can eat 7 chips for 2 pts. or try the pretzel slims from Trader Joe’s and you can have 23 pretzels for 2 pts. It really is a satisfying portion. When I make this I always double the amounts and make a really large bowl that I nibble on throughout the week, if it lasts that long! Snack away luvbugs!

I do hope it tastes as good as you say, because it doesn't look very appetizing (think baby poop). I do love avocados though, so I'll give it a try.
